Chicken Nuggets by

I ran out of almond meal one day so crumbed the chicken nuggets with a mixture of tapioca flour, chopped cashews, paprika and garlic powder. Was really yummy!!!
Ingredients
100-150 grams organic chicken breast
1 medium sized organic egg
1 C almond meal/flour
2 T paprika
1 T garlic powder
1 T onion powder
Ground himalayan rock salt
Ground black pepper
Instructions
Preheat oven to 180 degrees celsius on oven bake.
Cut chicken breast into nugget size pieces. Beat egg in a bowl and add chicken to this mixture and allow to soak for at least 15 minutes. Cover with glad wrap and place in fridge.
Combine remaining ingredients (almond meal/flour, paprika, garlic powder, onion powder, salt and pepper) in another bowl and mix with a fork. You should be looking to achieve rich orange/golden coloured powder.
Take chicken mixture bowl out of fridge. Remove excess egg from chicken pieces and roll in powder mixture ensuring that the chicken is completely covered. Lay each piece out on a lined baking tray. Repeat this process until all pieces are done.
Place in the oven and allow to cook for 10 minutes. Flip the nuggets and cook for a further 10 minutes. Remove from oven and serve while warm.
