I just love potato pancakes and this recipe is a twist on the norm, serve with applesauce or sour cream.-by BlueHyacinth
Ingredients
1 egg
2 tbs flour
1 tsp salt
1/4 tsp pepper
1 apple
1 lbs potato (about 3)
2 tba oil
Instructions
1. Heat over to 250.
2. Beat together egg, flour, salt and pepper.
3. Peel and chop the apple.
4. Peel the potatoes and grate them.
5. Stir the apple and grate them.
6. Heat 1 tbs of the oil in a large frying pan over med heat.
7. Pour in 1/2 cup of batter for each pancake and flatten.
8. Fry as many pancakes as you can at a time without crowding.
9. Cook them until golden, 3-4 minutes a side.
10. Keep the pancakes warm in the oven while cooking the remainder.
11. Add the remaining oil as needed.
