Spicy Shrimp (Inga) by
Ingredients
1/4 cup mayonaise
2 TB chopped fresh cilantro
4 tsp fresh lime juice
2 tsp chopped mango chutney (or more to taste)
3/4 tsp Thai green curry paste (or more to taste; can use red curry paste
1 lb.large fresh shrimp
fresh cilantro leaves
Frozen phyllo cups (AJ's) or Tostito Scoops
Instructions
Boil shrimp for about 2 minutes. Chop coarsly and cool.
Whisk mayonnaise, chopped fresh cilantro, lime juice, chutney and curry paste in medium bowl to blend. Stir in shrimp. Season with salt and pepper and adjust seasoning.
Spoon shrimp into whatever cups you use. Garnish with cilantro leaves.
