Sweet Potato Fries by

Sweet potatoes
Instructions
Trim ends of the sweet potatoes, then slice into pieces of equal thickness. Soak in water for 30 minutes to release starch. Rinse and pat completely dry. Toss with 1 foamy egg white per 2 potatoes and your favorite spices. Place slices on a parchment-lined baking sheet - be careful not to crowd the sheet. Roast at 425, checking for doness every 15 minutes, flipping once. Reduce heat to 200 to dry potato slices for 15-20 additional minutes. While a convection oven is ideal, you can also open your oven door a few times duirng roasting to vent the steam.
