A simple, easy recipe for Diabetic's. Good served with pasta by Barb Gertz.
Ingredients
2 tsp olive oil
1 small onion, thinly sliced
2 med tomatoes, chopped
2 cloves garlic, minced
1 tbs minced fresh parsley
1 tbs minced basil
1 1/2 c sliced zucchini
salt and pepper
1 tbs parmesan cheese
Instructions
1. In a skilled over medium heat, heat oil.
2. Add the onion and saute for 4 minutes.
3. Add the tomatoes, garlic parsley, and basil.
4. Cook for 3 minutes.
5. Add the zucchini and cook for 5 minutes.
6. Season with salt and pepper and sprinkle with parmesan.
