CHICKEN CROQUETTE by
Ingredients
3 cans condensed cream of chicken soup
22-1/2 cups finely chopped, cooked chicken meat
3-3/4 cups Italian-style dry bread crumbs
1-3/4 cups and 2 tablespoons minced celery
3/4 cup and 3 tablespoons minced onion
1 tablespoon and 3/4 teaspoon poultry seasoning
3/4 cup and 3 tablespoons shortening
7-1/2 cups milk
1 tablespoon and 2-1/2 teaspoons poultry seasoning
7-1/2 cups Italian-style dry bread crumbs, for rolling
Instructions
Combine 3 cup of the soup, chicken, bread crumbs, celery, onion and 1Tbsp poultry seasoning. Mix well and shape into 60 croquettes (I make patties). Chill in refrigerator for about 1 hour.
Remove croquettes from refrigerator and roll in additional bread crumbs. on a flat top, melt 4 tablespoons shortening. Brown the croquettes in the shortening. Meanwhile, in a saucepan, combine the remaining soup, milk and poultry seasoning. Heat over low, stirring occasionally. Serve sauce over croquettes.
