Kielbasa or beef sausage split pea soup by ReliefSociety

Ingredients

2 celery ribs thinly sliced or grated 1 Medium onion chopped 1 package (16oz) dried green split peas 9 cups water, divided 1 lb smoked sausage 4 medium carrots diced small 2 medium potatoes peeled and cubed small 1 Tbl minced parsley 1 tsp dried basil Salt pepper to taste

Instructions

In soup pot Brown beef. Remove and cook celery, onion in a little oil until tender.

Add peas and 6 cups water. Bring to a boil. Reduce heat, cover and simmer 25 min

Add back in the carrots, potatoes, herbs and seasonings. Along with remaining 3 cups water.

Return to a boil. Then reduce heat and simmer 20-25 min until veggies are tender.

*may add chicken bouillon for taste. Eat with yummy baguette or home made rolls.
