Sweet Potato Mash by Sarea Clark

Ingredients

2 Sweet Potatoes 2 oz. Butter 1 oz. Brown Sugar Olive Oil Salt and Pepper to taste

Instructions

Peel sweet potatoes and dice into 1/2" pieces, toss with olive oil and season with a pinch of salt. Roast in over for 20 minutes, or until they are fork tender.

Remove to a mixing bowl and combine with brown sugar and butter, mash with fork and season to taste with salt and pepper if desired.
