SIMPLE CHICKEN CASSEROLE by
Ingredients
2 cups shredded Monterey Jack cheese
2 cups chopped tomatoes
1 1/2 cups green salsa
2 cups shredded cooked chicken
1/4 cup minced cilantro
8 corn tortillas
1 cup low fat sour cream
TOPPINGS---Avocado slices, thinly sliced green onions
Instructions
Combine chicken, sour cream, and 3/4 cup salsa in a bowl. Spread 1/4 cup salsa on bottom of a greased 8" square baking dish. Layer half the tortillas and chicken mixture, sprinkle with tomatoes, cilantro and half of the cheese. Repeat layers with remaining tortillas, chicken mixture and cheese. Bake uncovered at 400 degrees for 25 min. or until bubbly. SERVE with remaining salsa and toppings...
