Simple Cream of Mushroom Soup by

Ingredients
8 oz fresh button mushrooms
2 Tbsps onions, chopped
2 cloves garlic, minced
2 Tbsps butter
2 Tbsps flour
2 cups chicken broth
1 cup fat-free Half & Half
Pinch of oregano and thyme
1/2 tsp salt
1/4 tsp pepper
Instructions
Cut the very end of the stem off each mushroom. Slice mushrooms not more than 1/4 inch thick.
Melt butter in large, deep saute pan over medium heat. Add onions, garlic, mushrooms, oregano and thyme. Cook until mushrooms are soft and just about done.
Blend in flour and stir well.
Add the chicken broth and continue to stir. Continue to stir until thickened slightly.
Stir in Half & Half. Simmer until thickened while stirring frequently.
Serve immediately.
