Chunky Chocolate Chip Peanut Butter Vegan Cookies by
Ingredients
1 1/4 unbleached white flour
1/2 tsp baking soda
1/2 tsp sea salt
1/2 tsp cinnamon
1 tsp vanilla
glug of vegetable oil
3/4 cup soy margarine
1 cup raw cane sugar
1/2 cup all-natural chunky peanut butter
1 'egg' use Ener-G Egg Replacer
10oz bag of Tropical Source chocolate chips
optional 1/2 cup chopped peanuts
Instructions
Combine 1st 4 ingredients in small bowl
Beat margarine, sugar & peanut butter in large bowl until creamy
Beat in 'egg', vanilla, and vegetable oil
Gradually beat in flour
Still in chocolate chips
Drop spoonfuls onto ungreased baking sheets
Press to flatten
Bake in preheated 375 degree oven 10-12 minutes
Let stand 5 mins and cool on wire racks

Beat in 'egg', vanilla, and vegetable oil
