Pete's BBQ Sauce by
Putting this together to try an get a good slow roasted pigs trotters recipe. Everywhere you look they boil the feet first. i want them roasted all the way.
Ingredients
1 tablespoon sesame oil
1 onion, finely chopped
2 garlic cloves (medium), finely chopped
2 tablespoon brown sugar
2 tablespoon (Smoked) paprika
2 tablespoon mustard powder
Half teaspoon ground cayenne (optional)
1 teaspoon salt
1 tablespoon pepper
400g can chopped tomato with juice
3 tablespoon apple cider vinegar
2 tablespoon Worcestershire sauce (See recipe for making your own)
8 drops liquid smoke (optional)
Instructions
Heat oil in a saucepan and add the onion and garlic.
Cook over a gentle heat 4-5 mins, until softened.
While that is cooking, measure the dry ingredients into a cup
When onions and garlic look ready, throw in the can of tomatoes
Add dry ingredients, and mix.
Measure and add wet ingredients, and mix.
Bring to the boil, then reduce heat and simmer for 20-30 mins, until thickened.
Pour into a glass container with a lid, cool and store in the fridge
Variation: Make with fresh tomatoes and cook them with onions and garlic for 30 minutes until reduced, then carry on as usual.
